Getting Saucy: Romesco

We love versatile sauces here at Green Chef. Making one delicious sauce that can be used for a variety of meals gives you incredible freedom in the kitchen. Romesco is one of our favorites that fits into this category. A Catalan staple, decadent and nutty, Romesco is excellent on grilled meats, like our fish recipe next week. Or try spreading Romesco on your next sandwich to kick it up a notch!

 

Romesco (gluten-free)

⅔ cup roasted red peppers, sliced
2 ⅔ tablespoons olive oil
2-3 sprigs parsley, chopped
1 ½ tablespoons hazelnuts, chopped
1 ¼ tablespoons almonds, chopped
1 tablespoon crushed tomatoes
1 teaspoon garlic, minced
1 tablespoon red wine vinegar
½ teaspoon paprika
¼ teaspoon smoked paprika
Pinch ancho chili powder
Pinch salt

 

Combine all ingredients except oil in a blender. Mix on medium speed for 30 seconds. While blender is running, slowly pour in oil.
